PECAN NUT CUP COOKIES

INGREDIENTS

COOKIE DOUGH
½ cup butter, softened
½ cup granulated sugar
1 egg
1 tsp of almond extract
1 ¾ cups of all-purpose flour
1 3oz cream cheese

INGREDIENTS
FILLING

1 cup powdered sugar

1/2 cup dark corn syrup

1 cup chopped pecans

 

DIRECTIONS

Preheat oven to 350 degrees.

Mix cream cheese, butter and flour and mix all ingredients with hands.

Shape one teaspoon of the mixture into ungreased cups of mini-muffin cup pan and bake for 7-10 minutes.

Remove from oven, cool and sprinkle a little confectioners sugar and serve. The cookies can be placed in a cookie tin for up to two weeks. Makes about 3 dozen cookies. Enjoy!
